0f75fbf226 Fix PostgreSQL stack configuration 
- Remove invalid PUID/PUIG environment variables (not supported by official Postgres image)
- Fix service name from 'postgres' to 'postgresSQL' to match configuration references
- Resolve permission errors on data directory mount
